OLD-FASHIONED MOLASSES CHEWS November 5, 2011

 These are some of my family’s favorite cookies!  They are great with milk, coffee, tea, or lemonade!

3/4 cup canola oil

1/4 cup dark molasses

1 and 1/4 cups sugar

2 eggs

2 and 3/4 cups flour

1 1/2 teaspoons baking soda

1 and 1/2 teaspoon each ground cinnamon and ginger

1/4 teaspoon ground cloves

In a large bowl, stir together oil, molasses, and 1 cup of the sugar.  Add eggs and beat until smooth.  In another bowl, stir together flour, baking soda, cinnamon, ginger, and cloves; gradually add to molasses mixture, beating until well combined.  Cover tightly with plastic wrap and refrigerate for at least 1 hour or until the next day. 

 Place remaining 1/4 cup sugar in a small bowl.  Roll dough into 1 1/2 inch balls, then roll in sugar.  Bake in 350 degree oven for 10-12 minutes or until lightly browned.  Let cool.
